Turkey Cooking – Still Learning

I am sure there is an art to cooking the Christmas turkey in an Aga. I just havent mastered it yet...do I cook it overnight in the simmering oven or as normal on the day. I have found this to take a lot of the heat from the oven and make cooking other vegs a long time. Any help would be very much appreciated. Thanks
